Apricot Coffee Cake Recipe
Ingredients:
1 jar of apricot preserves (12 ozs or 1 cup)
1 1/2 c of milk
2 whole eggs
1/4 c of sugar
3 1/2 c of Biscuit mix
Instructions:
Prepare and grease one baking pan (rectangular). Combine the biscuit mixture, sugar, milk and eggs. Beat thoroughly. Pour half of cake batter onto the baking pan, layer next with the streusel then the apricots.
Pour the rest of your batter, then the streusel and the apricots. Pop inside the oven for forty minutes at 350 degrees F.
