Banana Yeast Bread Recipe
Ingredients:
3/4 c of milk
1/2 c of butter (or margarine)
1/2 c of sugar (granulated)
6 c of flour (all purpose); sifted
1 pkg of yeast (active dry)
1 tsp of salt
3 pcs of eggs (large)
3 pcs of bananas (medium, ripe); mashed
1 tsp of water
Instructions:
Cook sugar, milk, and butter on small saucepan above moderate heat till the butter melts. Allow to cool at (120-130 degrees F).
Combine mixture of milk, (2 cups) flour, salt, yeast, two eggs, and bananas; beat gently using a mixer till blended. Increase the speed to medium and continue to beat for three mins. Gradually add the rest of sifted flour, until dough becomes firm.
Transfer to a slightly floured board; knead till elastic and smooth, about 4-6 mins. Place onto buttered bowl; turn once with the buttered side facing up. Cover then allow to rise till the size is doubled at about forty-five mins.
Cut the dough to half and mold each to round loaves. Place loaves on buttered cooking sheet and score a lattice design on top. Cover then allow to rise till the size is doubled at about forty-five mins.
Beat the rest of egg and water then brush above loaves. Place inside the oven and bake (375 degrees F) for 30-35 mins till golden-brown.
