Basil Onion Bread Recipe
Ingredients
2 Tbsps of vinegar (cider)
1/4 c of buttermilk
1/4 c of sugar
3 whole eggs
1 Tbsp of basil (leaves)
2 pcs of scallions; diced
1 tsp of Arm and Hammer (baking soda)
1 tsp of salt
1 Tbsp of baking powder
2 c of flour (unbleached)
1/2 c and 2 Tbsps of vegetable oil
1 pc of onion (large, Spanish); cut into 4 pcs
Instructions:
Line with cooking spray a twelve by four inch loaf pan. Heat oven, 325 deg Fahrenheit. Mince the onion. Saute in your pan until clear. Mix together flour, bicarbonate soda, baking powder and salt.
Mix together the cooked onions, scallions and the basil using a separate bowl; whisk the eggs in and add the sugar. Mix in the cider and buttermilk. Mix everything ’till flour has been amalgamated. Pour batter on the loaf pan. Bake ’till nicely browned which usually takes forty five minutes. Serve warm.
