Best Bread Recipe
Ingredients:
2 tsps of baking soda
1.5 tsps of cinnamon
1/2 tsp of baking powder
3 pcs of eggs
1/2 tsp of salt
2 c of sugar (granulated)
2 tsps of vanilla (extract)
2 c of prepared vegetables of fruits
3/4 c of pecans or walnuts; chopped finely
3/4 c of vegetable oil
A can of crushed pineapple (8 ozs)
Instructions:
Combine soda, baking powder, flour, cinnamon, nuts and salt. Set it aside. Lightly whisk eggs into a large-sized bowl. Blend in sugar, extract and oil. Beat ’til mixture is creamy. Strain pineapple, the juice saved if needed based on instructions of a particular vegetable or fruit.
Mix in the pineapples and vegetable or fruit. Combine into the flour mixture ’til dampened. Pour batter over a 9 by 5 by 3 inch loaf-pans, greased and sprinkled with flour.
Bake for an hour at an oven temperature of 350 degrees-F or ’til cake tester when inserted comes dry. Allow to cool for ten minutes. Transfer to rack.
For Apples, peel, remove core. Flake 2 medium-sized apples in order to produce two cups.
For Sweet Potatoes, remove peel. Flake a medium potato in order to produce two cups. Add a Tbsp of saved juice of pineapple.
For Carrots, remove peel. Flake 2 medium-sized carrots in order to produce two cups. Add a Tbsp of saved juice of pineapple.
For Zucchini, flake 2 medium-sized zucchinis in order to produce two cups.
You may bake bread into a variety of pan sizes with little changes in baking time. Half batter for Bundt and allow to bake for 45 minutes. In case of shortening pans, you should bake two pans for an hour. In 2 pans of 7 by 3.5 by 2 inch pans, let it bake for 45-50 minutes. In 8 pans of 4.5 by 2.5 by 1.5 inch pans, let it bake for 30-35 minutes.
