Blackberry Cream Scores Recipe
Ingredients:
2 c of flour (all-purpose)
2 Tbsps of sugar (granulated)
4 Tbsps of butter
1/3 c of whipped cream
2 tsps of sugar (coarse)
3 tsps of baking powder
1/2 tsp of salt
2 beaten eggs (reserve a tablespoon of eggwhite)
1 can of blackberries (16 oz); drained well
Instructions:
Stir baking powder, salt and sugar in mixing bowl thoroughly. Using a small fork, cut butter in ’til mixture creates fine-coarse meal. Add in cream and eggs to stiffen dough.
Once done, turn it out into slightly floured working board, then lightly knead ’til dough binds together.
Have the dough divided into 4 equal parts. Pat or roll every part to create a 6-inch diametered circle w/ 1/4-inch thickness. Place both circles into plain bake sheet w/ at least an inch gap.
Scoop half of your berries into every circle, allowing an inch allowance on sides. Cover w/ remaining circles then press edges around, sealing in your berries. You score each using a sharp knife (forming quarters).
Coat w/ reserved eggwhite and dust w/ coarse-textures sugar. Oven at four hundred degrees Fahrenheit for twenty minutes ’til golden-browned.
