Buttermilk-Raisin Biscuits Recipes
Ingredients:
1/4 c of butter; unsalted & melted
1 3/4 c of milk
2/3 c of shortening
1 tsp of sugar
4 c of flour (self rising, wheat)
3/4 c of apple juice (cider)
1/2 c of raisins
Instructions:
Prepare raisins by soaking them in cider or apple juice for eight hours. Next drain raisins. Discard cider.
Mix together the sugar and flour. Cut the shortening in until the mixture resembles coarse crumbs. Add the milk and using one fork, stir the mixture until it is moist and even in texture.
Add the raisins then knead softly for ten times. Flatten dough into half an inch thickness and cut using a two and a half inch cookie cutter.
Place on greased baking tray and bake for fifteen minutes. Coat with melted. Makes 24 biscuits.
