Butterscotch Rolls Recipe
Ingredients:
2 pkgs of yeast
1-1/2 c of milk
1 pkg of pudding mix (Butterscotch, small)
2 pcs of beaten eggs
5 c of flour (or more)
1/2 c of water (warm)
1/2 c of butter
1/4 tsp of butter flavoring
1 tsp of salt
For the Filling:
1/4 c of melted butter
2/3 c of sugar (brown)
2/3 c of coconut
Powdered sugar; sifted
1/4 tsp of burnt sugar flavoring
2 Tbsps of flour
1/3 c of chopped pecans
Instructions:
Dissolve the yeast with (warm) water and set it on the side. Combine milk and butterscotch mix; cook till it becomes thick. Add the flavoring and the butter; stir thoroughly; let it cool.
Once cooled, add salt, and eggs, then a small amount of flour; stir thoroughly and add the dissolved yeast. Gradually add flour till dough becomes stiff. Knead then place it on a buttered bowl then cover it with parchment paper then a towel. Allow to rise till he volume has doubled.
Mix melted butter, brown sugar, coconut, flavoring, flour, and pecans; as the filling. Divide the dough equally into 4 pieces. Roll out each to circle then cut to wedges. Place a teaspoonful of the filling on wider end then roll towards the point.
Arrange them on a greased baking sheet. Allow to rise till size has doubled. Bake for 12-15 mins at (375 degrees F). Once done, sift over powdered sugar while hot.
