Buttery Rich Cornbread Recipe
Ingredients:
3/4 c of cornmeal (yellow)
3/4 c of flour (all-purpose)
1/2 tsp of salt
2 pcs of eggs; beaten
1 Tbsp of baking powder
1 c of cream (sour)
1/2 c of butter; softened
1/2 c of peanut or corn oil
1 c of corn (whole kernel, frozen fresh or canned); drained
Instructions:
Preheat the oven, 400 deg F. Grease 8″ bread square pan. Mix together well baking powder, salt, flour and cornmeal. In separate bowl, mix baking powder, salt, flour and cornmeal then mix well-blended eggs with corn, oil and cream.
Pour liquid ingredients to dry mixture and stir ’til moist. Pour mixture on pan then bake for half an hour ’til bread decreases in size a bit away from pan’s edges and bread color is golden. Drizzle butter (melted) on cornbread then let stand inside pan for five minutes. Slice into rectangular servings.
