Carrot Bread Recipe
Ingredients:
2.5 c of flour (all-purpose); sifted
1 c of sugar (white); sifted
1/4 c of sugar (brown); sifted
1 tsp of baking powder; sifted
1 tsp of baking soda; sifted
1 & 1/4 tsps of cinnamon (ground); sifted
1/2 tsp of salt; sifted
3 pcs of eggs, well-beaten
1/2 c of oil (vegetable)
1/2 c of milk
2 c of carrots; shredded
1/2 c of raisins
1 tsp of vanilla
1/2 c of walnuts; chopped
1.5 c of coconut; flaked
1/2 c of cherries (maraschino); chopped
Instructions:
Preheat the oven, 350 deg Fahrenheit. Grease lightly 9″ x 5″ bread pan. Combine sifted dry ingredients and add a combination of vanilla, milk, oil as well as eggs. Stir ’til well-blended; add walnuts, raisins, cherries, coconut and carrots to the mixture then pour them into the bread pan.
Bake 50-60 minutes ’til a wooden stick inserted in loaf’s middle is without sticky substances when pulled out. Allow loaf to be cooled on rack 10 minutes prior to removing it from pan. Keep in cling wrap in order to remain moist.
