Apricot Sour Cream Coffee Cake Recipe
Ingredients:
1/3 c of butter
2/3 c of sugar (brown)
1 tsp of cinnamon powder
2 1/4 c of coconut (desicated)
1 can of chopped apricots (16 ozs)
1 c of artificially soured cream
1/4 tsp of Arm and Hammer (baking soda)
1 tsp of baking powder
1/4 tsp of salt
2 c of flour
1 tsp of vanilla extract
2 whole eggs
2 c of sugar
1 c of butter
Instructions:
Mix sugar and butter ’till well incorporated. Whisk the eggs in and the essence of vanilla. Blend thoroughly. Next step is to add artificially soured cream (sour cream). Blend thoroughly until incorporated.
Using a separate bowl, sift together flour, Arm and Hammer (baking soda), salt and baking powder. Incorporate flour mixture to your butter mixture.
Next, fold apricots into the batter then bake fifty minutes at 350 degrees F.
Top with coconut and cinnamon frosting. Mix the desicated coconut, cinnamon powder, sugar and the melted butter. Smear atop the cake. Return cake inside the oven for one minute until nicely browned.
