LuAnns Seedtime and Harvest Loafs Recipe
Ingredients:
2 c of water
1/3 c of honey
2 Tbsps of gorund flax seeds
1 Tbsp of salt
4 tsps of bread-machine yeast
4 Tbsps of wheat gluten
1/2 c of pumpkin seeds; roasted
1/2 c of sunflower seeds; roasted
1/2 c of flour (soy)
6 & 1/2 c whole flour (wheat); divided
1/2 c millet; uncooked
2 Tbsps of oil (olive)
1 c canned puree of pumpkin
Instructions:
In electric-mixer bowl, mix honey, pimpkin, water, oil, flax seeds, salt, millet, 2 c of flour (wheat), bread-machine yeast, flour (soy), gluten & seeds. Beat mixture in mid-speed for 2 mins.
Temporarily stop mixing then add two cups flour, w/ mixer set on low-speed, mix gradually 2 additional cups flour. Knead in mixer well for 5 more minutes more. Add flour when needed enough to form dough smoothly into ball. Scrape off side of bowl.
Temporarily remove dough and grease bowl sides. Return dough carefully into bowl, then turn tin order to have surface coated w/oil. Have it covered w/ plastic cling wrap. Place in warm, draft-free place and stand it for 1 – 1 &1/2 hrs ’til doubled in volume. Punch dough down.
Grease large bake sheets and set them aside, then divide dough in half. On floued surface, have every half shaped into oval-shaped loaf. Turn dough-loaves into pan, leaving a space allowance for dough’s rising.
Cut three slashes on dough diagonally w/ a knife across your loaves. Then cover w/ light towel and let rise evenly for 45 mins or ’til loaves doubled its volume.
Bake at three hundred degrees Fahrenheit for 40 mins or ’til browned & produce a hollow sound once tapped. Remove bread from oven and lightly brush w/ oil. Cover them loosely w/ light towel ’til completely cooled. Keep in tight-covered containers.
