Pumpkin Cornbread Recipe
Ingredients:
1/2 c of flour (whole wheat)
1-1/2 c of cornmeal
1 Tbsp of baking powder (Calumet)
3 Tbsps of sugar (granulated)
1 tsp of cinnamon (ground)
1 tsp of salt
1 pc of egg (large)
3 Tbsps of vegetable oil (or canola oil)
3/4 c of pure pumpkin (canned)
1-1/2 c of milk
Instructions:
Combine flour, cornmeal, Calumet, sugar, cinnamon, and salt inside a mixing bowl. Place egg inside a bowl; beat then add oil, milk, and pumpkin. Pour onto the flour mixture. Stir till moistened.
Pour onto a buttered 8 inch square baking pan and bake, 350 deg Fahrenheit for 30-35 mins. Let it cool, about ten mins then cut to squares.
