Southern Sweet Potato Bread Recipe
Ingredients:
1.5 c of flour (sifted & self-rising)
1 c of sugar (granulated)
1 c of sweet potatoes (cooked, mashed)
1 c of pecans (chopped)
1/2 c of raisins (golden)
1/2 c of oil (vegetable)
2 tbsp of milk
1 tsp of nutmeg
1/2 tsp of cinnamon
2 pc of eggs; lightly beaten
Instructions:
Preheat the oven 325 deg Fahrenheit. Smear some oil to the bottom of 9″x4″x2″ bread pan. Combine the spices and flour into a bowl; add in the beaten eggs, milk, oil as well as sugar; mix it well, then drop in the pecans, raisins and potatoes.
Transfer the mixture into the bread pan then bake for 70 minutes ’til toothpick placed in the middle will come out without crumbs. Let it cool inside the bread pan for 1/4 hour then move the loaf from the pan to the rack to let it cool. Wrap the bread then store in cool area overnight. Yields 8-10 servings.
