Mashed Potato Dinner Rolls Recipe
Ingredients:
1/2 c of shortening
1 pkg of yeast (dry)
2 c of milk (lukewarm)
1 c of potatoes (hot); mashed
1 tsp of salt
2/3 c of sugar (granulated)
6 c of all purpose flour
2 pcs of eggs
Instructions:
Combine salt, sugar, potatoes and shortening. Dissolve dry yeast with lukewarm milk. Blend yeast mixture to the potatoes.
Whisk eggs into a large-sized bowl. Blend in potato-yeast mixture. Mix well using a wooden spoon. Mix in flour just enough to produce a dough.
Coat surface of dough with some oil. Using a towel, cover dough. Set aside inside a warm room ’til double in size.
Form into rolls into shapes of large eggs by hand. Transfer to a lightly-greased muffin cups. Set aside for dough to rise. Bake for ten minutes into a 450 degree-F oven. Yields 60 rolls.
