Cherry Almond Scones Recipe
Ingredients:
2.5 c of all purpose flour
1 tsp of baking powder
1/4 c of sugar (granulated)
3/4 tsp of salt (kosher)
1/4 tsp of baking soda
1 tsp of lemon zest
10 Tbsps of butter (cold & unsalted); cut into small cubes
1/2 c of cherries (dried); chopped coarsely
1/2 c of almonds (blanched); sliced, toasted & cooled
1/4 tsp of vanilla (pure extract)
1/4 tsp of almond (pure extract)
1/4 c of heavy cream
3/4 c of buttermilk
1/4 c of sugar
Instructions:
Preheat oven up to 425-degree F.
On to a large-sized bowl, blend all dry ingredients. Add in butter using food blender ’til mixture is of similar consistency to a cornmeal. Add almonds and cherries.
Add extracts to mixture and slowly pour buttermilk mixing well with spatula ’til dough is no longer crumbly. Don’t over work dough. Over a lightly-floured surface, transfer dough and roll into 9 inch rounds with 1 inch thickness.
Use a knife lightly-floured, cut dough to 8 triangular shapes. Place on to a wax paper lined cookie sheet. Using cream, brush scones and sprinkle generously with sugar.
Let it bake in oven for ten minutes. Lower temperature of oven 350 ’til golden for 15 minutes. Best served warm and with some honey, jam and butter. Place almonds into pan to medium-heat for couple of minutes constantly tossing ’til brown that gives off toasted smell.
