Chocolate Cappuccino Coffee Cake Recipe
Ingredients:
1/3 c of coconut; flaked
1/4 c of nuts; chopped
1/4 c of sugar
2 c of Original Bisquick
1 Tbsp of margarine or butter; softened
2/3 c of water or milk
2 Tbsps of margarine or butter; softened
1/4 c of sugar
1 pc of egg
2 tsps of coffee (powdered, instant)
1/3 c of choco chips (semisweet); melted
Instructions:
Heat the oven, 400 degrees F. Grease 8″ x 8″ x 2″ pan. In bowl, combine 1 Tbsp of butter, 1/4 c of sugar, nuts and coconut, then set mixture aside. Not including coffee and choco chips, combine and beat the rest of the ingredients using mixer (low speed) for half a minute. Scrape bowl often. Beat again (medium speed) 4 more minutes and scraping the sides of bowl often; pour mixture into prepared pan.
Combine coffee and choco chips then drizzle into batter. Swirl a couple of times for marbling effect. Drizzle coconut mix on top. Then bake 20-25 minutes ’til light gold-brown in color.
