Cinnamon Bun Scones Recipe
Ingredients:
1/4 c & 2 Tbsps of sugar; divided
1/4 tsp of salt
1 Tbsp of baking powder
8 Tbsps of margarine or butter; diced and chilled
3/4 c of milk
2 tsps of cinnamon; ground
1 pc of egg (beaten lightly)
1 tsp of vanilla (extract)
1/2 c of pecans; toasted & chopped
3/4 c of powdered sugar
3-4 tsps of milk or orange juice
Instructions:
Preheat the oven with a temperature of 425 degrees-F. Grease baking sheet with vegetable spray. Combine oats, salt, 1/4 c of baking powder, flour and sugar. Mix well. Blend in diced butter in to food blender ’til crumbly like bread crumbs.
Combine egg, vanilla and milk into a small-sized bowl. Blend mixture well. Mix wet to the flour mixture and stir using a spatula or fork ’til flour mixture is moist.
Into a small-sized bowl, mix a couple tablespoons of sugar, cinnamon and toasted pecans. In toasting pecans, lay out without overlapping each other on baking tray to a 350 degree-F oven for 6-8 minutes ’til browned. Allow to cool first.
Mix mixture well and add this to the dough and mix batter gently just enough to incorporate cinnamon and pecan mixture but don’t blend dough completely. On a baking sheet, drop the dough to 1/4 rounds a couple of inches away from each other.
Bake for 11-13 minutes ’til golden-brown. Let it cool for a few minutes on a cooling rack. Into a small-sized bowl, mix the milk or juice with sugar just enough to achieve the consistency of choice.
Blend ’til smooth. Use this as glaze on top of scones. Best served warm.
