Cinnamon Oatmeal Bread with Icing Recipe
Ingredients:
1 pkg of yeast (active dry)
3/4 c of water (warm, 110 degrees F)
1/4 c of shortening
1/4 c of sugar (granulated)
1 pc of egg
2 Tbsps of cocoa
1 tsp of salt
2-1/4 c of flour; sifted
1/4 c of oatmeal
2 Tbsps of butter; melted
1-1/2 tsps of cinnamon (ground)
3 Tbsps of sugar
For the (Brown Butter) Glaze:
1-1/2 Tbsps of butter
3/4 c of confectioner’s sugar; sifted
1 Tbsp of cream
1/2 tsp of vanilla extract
Instructions:
Dissolve the yeast with water inside a large mixing bowl. Add sugar, shortening, cocoa, egg, (1 cup) flour, and salt. Beat thoroughly for two mins; add the rest of flour then the oatmeal; blend till smooth. Cover the bowl; letting the dough rise till the volume has doubled, at about an hour or so.
Stir batter and beat twenty-five strokes. Roll above floured surface till it becomes soft;divide to eight parts equally. Roll each part to ball then roll on butter then on cinnamon-sugar mixture.
Place the balls on buttered 9×5 inch (loaf) pan then cover. Allow to rise till volume has doubled, at about forty mins. Place inside the oven and bake for thirty-five mins at (375 degrees F). Remove bread from the pan at once and cool.
To make the glaze, brown the butter on saucepan above moderate heat till slightly brown and add sugar, cream, and vanilla. Stir till smooth and drizzle above the cooled bread.
