Coconut Bread Recipe
Ingredients:
4 pcs of eggs
1 c of oil (vegetable)
2 c of sugar (granulated)
2 tsps of flavoring (coconut)
1 c of coconut
3 c of flour
1 c of buttermilk
1/2 tsp of salt
1/2 tsp of baking powder
1 c of nuts; chopped coarsely
For the Glaze:
1.5 c of sugar (granulated)
3 Tbsps of butter
3/4 c of water
1 tsp of flavoring (coconut)
Instructions:
In bowl, combine flavoring, oil, sugar and eggs. Combine non-wet ingredients in separate bowl. Alternately combine buttermilk and flour mixture w/ egg. Add nuts and coconut. Bake into preheated oven, 325 degrees Fahrenheit, using two bread pans for 60 minutes.
Drizzle glaze on loaf while it is still hot. To create the glaze, boil 1.5 c of sugar (granulated), 3 Tbsps of butter and 3/4 c of water for 5 mins. Drop flavoring. Lift bread off pan and allow to be cooled above rack.
