Corn Cakes with Raspberry Butter Recipes
Ingredients:
2 Tbsps of butter; melted
1/2 c of milk
1 whole egg
1/4 tsp of salt
1/2 tsp of baking powder
2 Tbsps of sugar
1/2 c of cornmeal (yellow)
1/2 c of flour
Instructions:
Preset oven (400 degrees F). Spray grease your baking tray. Set aside.
Mix together the flour, baking powder, corn meal, milk, sugar and salt. Whisk in the egg. Beat well then add the butter.
Blend everything thoroughly. Scoop small amounts of the dough and drop on your baking tray. Bake for fifteen minutes ’till they are set.
Best served with topping (Raspberry Butter). To make, whisk together half a cup of butter that is unsalted and a tablespoon of raspberry preserve or jam.
