Corn Dodgers Recipe
Ingredients:
1 tsp of baking powder
2 c of milk
1 Tbsp of sugar
1/2 tsp of salt
2 Tbsps of butter
2 c of cornmeal (yellow)
Instructions:
Preset oven (400 degrees F).
Heat up cornmeal using a sauce-pan with the butter, sugar, milk and salt. Bring mixture to boil. Remove from heat. Set aside for five minutes.
Next add the baking powder. Mix well to form a dough. Scoop small amounts onto the baking tray. Pop in the oven for fifteen minutes until sides aer nicely browned.
Cut and then fill biscuits with honey-butter sauce. Or you can add two tablespoons of minced Japaleno or top with grated Cheddar or Monterey Jack.
