Cranberry-Banana Bread Recipe
Ingredients:
2 c of cranberries (fresh)
1/2 c of sugar (brown, firmly packed)
1/4 c of oil (vegetable)
2 pcs of egg (whites only)
1 pc of egg
1 & 3/4 c of flour (all-purpose)
2 tsps of baking powder
1/2 tsp of salt
1/4 tsp of baking soda
1 c of banana (mashed)
cooking spray (vegetable)
Instructions:
Using saucepan, cook cranberries for five 5 mins while covered above moderate flame ’til berries starts popping. Turn off the flame. Mix oil and sugar in another bowl (medium); using an electricity-powered mixer with speed set in medium, whisk 2 mins or ’til well-blended. Put in the egg whites as well as egg, continue beating until mixture becomes lemon colored and light. Mix together the flour, baking powder, baking soda and salt and slowly add it to the egg mixture alternate the banana. Mix thoroughly. Put in the cranberries.
Put the mixture in bread pan (9″ by 5″) that has been thinly coated using (cooking) spray. Put in oven and bake, 350 degrees Fahrenhiet, 55-60 mins or ’til done. Protect the bread with an foil, 15 mins before turning off the oven. Leave in bread pan (10 mins), remove and put on rack to cool.
