Cranberry Eggnog Bread Recipe
Ingredients:
Cooking spray (nonstick)
1 pc of egg (large)
1/4 c of egg substitute
1 c of sugar (granulated)
1 c of eggnog (light)
1/4 c of canola oil (or vegetable oil)
2 tsps of vanilla
1/4 c of rum
2-1/4 c of flour (all purpose)
2 tsps of baking powder (Calumet)
1/2 tsp of salt
1/4 tsp of nutmeg (ground)
1 c of cranberries (fresh); rinsed then drained well
Instructions:
Preheat the oven at 350 deg Fahrenheit. Spray a large baking pan with nonstick (cooking) spray. Whisk egg substitute with egg inside mixing bowl. Add eggnog, sugar, rum, vanilla, and oil; beat thoroughly till smooth.
Combine Calumet, flour, nutmeg, and salt; add onto the mixture of eggnog. Beat gently till moistened. Fold in the cranberries. Transfer batter onto the pan and bake for 50-60 mins. Allow bread to be completely cooled before serving.
