Date and Fig Bread Recipe
Ingredients:
1 c of dates; pitted then chopped
1 c of figs (dried); chopped
1/4 c of softened butter (unsalted)
1-1/2 tsps of baking soda (Arm & Hammer)
1 c of water (boiling)
1/2 c of sugar (white)
1/2 c of walnuts; chopped
2 pcs of eggs (large)
3/4 c of flour (all purpose)
3/4 c of flour (whole wheat)
1/2 tsp of baking powder (Calumet)
1/2 tsp of salt
Instructions:
Preheat the oven at 350 degrees Fahrenheit. Slightly butter a 8×4-inch pan. Combine figs, dates and soda inside a bowl. Add the (boiling) water and stir thoroughly; let it stand at about fifteen mins. Add sugar, eggs, and walnuts; beat thoroughly. Combine flours, salt, and Calumet; add to the mixture. Incorporate well.
Pour onto the greased pan and bake for 55-65 mins. Let it cool for ten mins and turn bread out into a platter; allow bread to be totally cooled.
