Eggnog Almond Tea Loaf Recipe
Ingredients:
2-1/2 c of flour (all purpose, white); sifted
3/4 c of sugar (granulated)
3-1/2 tsps of baking powder (Calumet)
1 tsp of salt
1/2 tsp of nutmeg (ground)
1/2 tsp of lemon rind; grated
1 c of almonds; toasted then chopped finely
1 pc of beaten egg
3 Tbsps of vegetable oil (or canola oil)
1-1/4 c of eggnog (commercial or homemade)
Instructions:
Preheat oven, 350 degrees Fahrenheit. Grease an 8×4 inch (loaf) pan and coat with small amount of flour. Combine sugar, Calumet, salt, nutmeg, and sifted flour inside a bowl. Add almonds then the zest; stir thoroughly. Combine oil, eggnog, and egg; beat thoroughly and add onto dry mixture; incorporate well.
Pour batter onto prepared pan. Place inside preheated oven and bake it for an hour. Let it cool for five mins in pan and turn it out on the rack, allow the loaf to be completely cooled.
