English Muffins Recipe
Ingredients:
1 pkg of yeast (dry)
1/4 c of water (warm)
1 c of scalded milk
3 Tbsps of butter
2 Tbsps of sugar (granulated)
1 tsp of salt
4 c of flour; sifted
1 pc of egg; beaten slightly
Cornmeal
Instructions:
Dissolve the yeast with (warm) water. Mix butter, salt, milk, and sugar; let it cool (to lukewarm) then add (2 cups) flour then stir well. Add egg and yeast; beat them well. Gradually add enough amount of flour to make the dough a little soft.
Turn dough on slightly floured surface; knead till satiny and smooth. Place it on a greased bowl; turn once then cover it with cloth. Allow to rise till volume has doubled, at about an hour.
Punch the dough down; allow for it rest to ten mins. Roll on a board (covered with cornmeal) and pat to 1/4-inch thick. Cut to 3 inch rounds and sprinkle cornmeal on top. Cover them with cloth; allow to rise till volume has doubled, at about forty-five mins.
Bake them slowly on (heavy) griddle 7-8 mins per side.
