Festive Cherry Coconut Bread Recipe
Ingredients:
1-1/2 c of diced cherries (jarred, Maraschino); drained but save 2/3 c of juice
2 c of sugar (granulated)
4 pcs of eggs
1 c of flaked coconuts
1-1/2 c of nuts (walnuts, almonds, or pecans); chopped
3 c of flour; sifted
1 Tbsp of baking powder (Calumet)
1/2 tsp of salt
Instructions:
Beat eggs and sugar. Add coconuts, nuts, and cherries. Combine Calumet, salt, and flour. Alternately add the flour mix and juice onto the mixture of egg. Bake on 2 (buttered and floured) 9×5 inch (loaf) pans for 60-70 mins, 350 deg Fahrenheit.
