Fiesta Focaccia Bread Recipe
Ingredients:
2 pcs of bread dough loaves (frozen); thawed completely
1 tsp of cumin (ground)
1 Tbsp of olive oil
1/2 tsp of pepper flakes (red)
1/2 tsp of oregano (Mexican)
1 pc of diced tomatoes (large or 8 oz of canned); drained
1/2 c of bell pepper (yellow or green); sliced thinly
1/2 c of onion (red); sliced thinly
2 Tbsps of jalapenos (canned); chopped
1 c of olives (ripe); pitted then drained
Instructions:
Combine the two loaves. Grease an 11×17 inch cooking sheet. Transfer dough above slightly floured board; roll into an 11×17 inch rectangle piece. If the dough will shrink, let it rest for five mins and continue to roll.
Place the dough onto pan; press the dough onto the corners. Gently brush oil on top evenly and top the pepper flakes and oregano. Sprinkle tomato, onion, peppers, jalapeno, and olives. Allow to rise again till puffy at about half an hour.
Bake inside preheated oven (375 degrees F) for 12-15 mins or till slightly golden-brown. Allow to cool.
