Fig Scones Recipe
Ingredients:
2/3 c of oatmeal
1 tsp of salt
4 tsps of baking powder
1/2 c of brown sugar; packed
1 tsp of cinnamon; ground
1 c of figs (fresh or in can); strained and chopped
1/2 c of butter (unsalted); softened
1 & 3/4 c of whipping cream
Instructions:
Preheat the oven with a temperature of 400 degrees-F.
Combine the oatmeal, salt, baking powder, brown sugar, cinnamon and figs in a medium-sized bowl. Dice in the butter ’til mixture resembles course crumbs. Add the whipping cream and blend briefly. Mixture should be firm yet a bit sticky.
Shape dough to form a ball. Transfer to a lightly-floured surface. With the use of your hand, flatten dough to a half inch thick. Cut the dough to scones with the use of a cookie cutter, 3 inches in diameter. Scraps are still used. Just roll it out again.
Transfer the dough on a wax paper covered cookie sheet. Bake for 12-15 minutes ’til golden-brown. Test if finished by checking the bottom of the scones with a spatula. Considered done when bottom of the scones become golden-brown.
Remove scones from the oven and leave them on cookie sheets for about five minutes to cool down. Serve warm with marmalade or jam of choice. This yields a dozen pieces.
