Ingredients:
2 packs of dried yeast
1 & 1/2 c of salt
6-7 c of flour (all-purpose)
2 Tbsps of sugar (granulated)
2 c of warmed water
2 Tbsps of olive oil
Instructions:
Combine sugar and yeast w/ half-cup warmed water. Stir and dissolve components, then “proof”.
Mix 2 c of all-purpose flour & salt in a bowl. Once yeast fully “proofed”, pour in more water enough to create two cups. Pour to salt & flour mix. As the dough starts forming, add in two additional cups all-purpose flour & two tablespoons of oil.
Mix dough by bare hands, adding 1-1 &1/2 c more of all-purpose flour ’til stiff and pliable bread dough is achieved. Knead for 10 mins vigorously.
Transfer onto a floured surface, continue kneading. Add 1/2-1 c flour to dough ’til elastic and smooth.
Grease a bowl w/ oil. Turn your dough all around the bowl to evenly coat the surface. cover w/ dampened towel and keep in a draft-free area. Allow to evenly rise for 1-1 & 1/2 hrs.
Transfer dough onto a floured surface and then punch dough down, removing trapped gas and air. Do it quickly in less than one minute. With sharp-edged knife, create four equal dough parts.
Form into elongated bread loaf (15 x 1 inch), rolling slowly to smoothen loaf. Arrange loaves in lightly oiled cornmeal-dusted bake sheet. Make diagonal slashes in the loaves at least 4-inch apart w/ a sharp-edged knife.
Put sheets inside cold oven then rise to double size for 30-45 mins.
Heat oven at four hundred degrees Fahrenheit. Five minutes after, coat bread w/ eggwhite mixed w/ 2 Tbsps of water, then sprinkle w/ sesame seeds & coarse salt.
Adjust oven heat it to three hundred degrees Fahrenheit and bake it for forty minutes more. Bread’s cooked when it creates a hollow sound when tapped in the bottom.
