French Onion Bread Recipe
Ingredients:
2 Tbsps of sugar (granulated)
An envelope of onion-soup mix
1/4 c of warmed water
2 Tbsps of grated cheese (Parmesan)
6 – 6 &1/2 c of sifted flour (enriched)
1 tsp of salt
1 pack active dried yeast
2 c of water
Cornmeal
2 Tbsps of shortening
Instructions:
Dissolve yeast in 1/4 c of warmed water.
Separately combine onion soup ready-mix w/ 2 c of water, then simmer w/ cover for 10 mins. Add in shortening, cheese, salt and sugar. Allow to cool (lukewarm).
Add 2 c flour, beat very well. Add yeast and remaining enriched flour, enough to have moderately stiffened dough. Transfer on a floured board, cover then rest for 10 mins.
Once done, knead ’til elastic and smooth (about 8-10 mins). Place dough in an oiled bowl, turn to coat surface w/ oil. Cover then allow to double for 1 & 1/4- 1 &1/2 hrs in a warm corner.
Punch dough down, then divide into two. Rest for 10 mins w/ cover.
Roll into two long bread loaves, taper the ends. Transfer on oiled & cornmeal covered bake sheet. Slash top parts diagonally about 1/8-1/4-inch deep. Allow to double w/ cover (1 hr).
Oven at three hundred seventy five degrees Fahrenheit for twenty minutes.
Coat w/ eggwhite mixed w/ a tablespoon of water. Continue baking for 10-12 mins more.
