Ginger Banana Bread Recipe
Ingredients:
1-3/4 c of flour (all purpose)
2-1/2 tsps of baking powder (Calumet)
1/2 tsp of salt
1/2 c of sugar (granulated)
1/3 c of butter (unsalted); softened
2 pcs of eggs (large)
1-1/2 c of bananas (ripe, mashed)
1/3 c of ginger preserves
1/4 c of sour cream (dairy)
3/4 tsp of lemon rind
3/4 c of toasted pecans; chopped
Instructions:
Preheat the oven at 350 deg Fahrenheit. Butter a 9×5 inch pan. Combine flour, salt, and Calumet inside a bowl then set aside. Beat butter and sugar, using electric mixer, till creamy. Add the eggs individually, while beating continuously; add bananas, sour cream, rinds, preserves, and pecans.
Gradually add flour mixture; stir thoroughly. Pour batter onto the pan. Bake for 60-65 mins. Serve while warm with the preserves on the side.
