Ginger Scones Recipe

Ingredients:

2 c of all purpose flour
6 Tbsps of sugar (granulated); divided
1 pc of egg
2.5 tsps of baking powder
1/2 tsp of salt
2 tsps of ginger; ground
1/2 tsp of baking soda
1/2 c of margarine or butter
2 Tbsps of orange zest
3/4 c of buttermilk

Instructions:

Combine four tablespoons of sugar, flour, ginger, baking powder, salt and baking soda. Dice in the butter using a food blender ’til resembles fine crumbs.

Add in the orange zest. Manually beat the buttermilk and egg together. Add this to the dry ingredients and blend well. Divide dough in two portions.

On a heavily-floured surface, transfer each and knead gently with flour on hands. Roll out into rounds 5/8 inch thick. With knife covered in flour, cut dough into six wedges. Transfer to an ungreased baking sheet.

With the half teaspoon sugar, sprinkle the dough and bake for 14-15 minutes ’til golden on a 425 degree-F oven. Split and serve with jelly or butter.
