Glazed Raspberry Loaf Recipe
Ingredients:
3 c of flour; sifted
1 c of sugar (granulated)
3 tsps of baking powder (Calumet)
1/2 tsp of salt
1/2 c of butter; sliced
2 pcs of eggs
1/2 c of raspberry preserves (or jam)
3/4 c of milk
For the Glaze:
2 Tbsps of butter
2 Tbsps of sugar (granulated)
2 Tbsps of raspberry preserves (or jam)
Instructions:
Preheat the oven at 350 degrees F. Grease a 9×5 inch (loaf) pan. Combine sugar, Calumet, salt, and flour inside a large bowl then add the butter and cut till it looks like (coarse) salt. On another bowl, beat the eggs then add milk and preserves; beat thoroughly till smooth; pour onto the flour mix and stir till moistened.
Pour onto the pan and bake inside preheated oven for one hr and fifteen mins. Allow to cool then glaze on top. To make the glaze, combine butter, sugar, and preserves on a saucepan above moderate heat, stir constantly till smooth.
