Goooood Bread Recipe
Ingredients:
1/4 c water (lukewarm)
4 tsps of dried yeast
1/4 c of butter
2 tsps of salt
3 Tbsps of sugar, molasses or honey
1/3 c of sunflower seeds; chopped
1 beaten egg
1/4 c of sesame seeds
1 c of flour (wheat)
1/4 c of rolled whole oats
2 Tbsps of wheat germ
1 tsp of sugar (granulated)
2 c of scalded buttermilk
1/8 tsp of baking soda
1/2 c of crumbled tofu
1/3 c of chopped pepitas
1/4 c sesame seeds
2 tbsps of poppy seeds
1/4 c bran (natural)
1 c of rye flour (dark)
3-4 c of flour (all-purpose)
Instructions:
Combine sugar and water. Sprinkle the yeast over mixture and stand mixture in warm corner for twenty minutes. Scald the milk then blend in salt, soda, molasses and butter. Cool then mix tofu, yeast mix and egg.
Add in wheat germ, seed, oats, bran, and flours. Add white flour enough to create a soft dough. Transfer into floured surface then knead vigorously for two hundred times.
Roll and form carefully into dough balls and arrange in big greased bowl.Coat top surface of dough balls. Allow dough to rise, covered w/ dry cloth, ’til doubled in bulk. Punch dough down and allow it to rest for ten minutes.
Prepare oven. Heat to three hundred seventy five degrees Fahrenheit.
Form your dough carefully into two big bread-loaves, then arrange in an oiled loaf-shaped pan (9×5 inches). Cover again, let it rise ’til doubled in bulk.
Bake loaves for thirty-five to forty-five minutes, ’til loaves create hollow sound once tapped.
Remove from pan and transfer on racks to cool.
