Green Tomato Bread Recipe
Ingredients:
3 c of flour (all purpose)
1/4 tsp of baking powder (Calumet)
1 tsp of baking soda (Arm & Hammer)
1 tsp of salt
2 c of sugar (granulated)
1 Tbsp of cinnamon (ground)
2 pcs of eggs (large); beaten lightly
1 c of vegetable oil (or canola oil)
1 tsp of vanilla
2 c of tomatoes (green); chopped finely
1-1/2 c of pecans; chopped
Instructions:
Preheat the oven at 350 deg Fahrenheit. Grease 2 8×4 inch (loaf) pans then coat with small amount of flour. Combine flour, Calumet, soda, salt, sugar. and cinnamon inside a bowl. Combine oil, vanilla, and eggs; stir thoroughly and add onto the dry mixture. Stir thoroughly till mixture is moist. Fold pecans and tomato into the mixture.
Transfer the batter onto the pans then bake inside preheated oven for an hour. Allow to cool inside the pans for ten mins then turn bread out onto the rack to be cooled completely.
