Half Moon Bay Pumpkin Bread Recipe
Ingredients:
3 c of sugar (granulated)
3-1/2 c of flour (all purpose)
1/2 tsp of salt
2 tsps of baking soda (Arm & Hammer)
1 tsp of cinnamon (ground)
1 tsp of nutmeg (ground)
4 pcs of eggs (large)
1 c of vegetable oil (or canola oil)
2 c of pumpkin (cooked)
2/3 c of water
1-1/2 c of walnuts; chopped
Cream cheese
Instructions:
Preheat oven at 350 deg Fahrenheit. Butter (loaf) pan(s). Combine sugar, flour, salt, soda, cinnamon, and nutmeg inside a mixing bowl. Combine pumpkin, oil, water, and eggs; beat them thoroughly then add onto dry mixture. Incorporate well and fold in walnuts.
Pour mixture onto 2/3 of pan. Bake inside preheated oven for 60-90 mins or till a tester comes clean after inserting inside (center portion) bread. Let bread cool inside the pan for ten mins then remove from pans and let them cool completely on rack. Slice and serve with the cream cheese.
