Homemade Pineapple Sweet Rolls Recipe
Ingredients:
1/4 oz of yeast (active, dry)
1/2 c of water (warm, 110-115 degrees F)
1-1/2 c of milk (warm, 110-115 degrees F)
6 Tbsps of melted butter
1 c of sugar (granulated)
1 tsp of salt
2 pcs of eggs; beaten
6 or 6-1/2 c of flour (all purpose)
For the Filling:
1 Tbsp of butter
1 Tbsp of flour (all purpose)
1/2 c of juice (orange)
2 Tbsps of orange zest; grated
8 oz of crushed pineapple (canned); drained
1/3 c of sugar (granulated)
1/8 tsp of salt
For the Glaze:
1/2 c of powdered sugar
1 Tbsp of juice (orange)
Instructions:
Preheat the oven at (350 degrees F). Dissolve the yeast with water inside a mixing bowl. Add butter, salt, milk, eggs, sugar, and (1-1/3 cups) flour; beat till mixture has smoothened. Gradually add enough amount of flour, making dough soft.
Turn on a slightly floured board; knead till elastic and smooth, at about 6-8 mins. Place on a buttered bowl; turn once and cover. Allow to rise till volume has doubled, at about an hour or more.
While waiting for the dough, melt the butter inside saucepan then add butter, flour, orange juice, orange zest, pineapple, sugar, and salt. Let it boil while stirring frequently. Once boiling, reduce the heat. Allow to simmer for 3-4 mins or till mixture has thickened. Let it cool and set aside.
Punch down the dough; divide equally into two pieces. Roll out each piece into 15×12 inch rectangle. Spread the filling evenly. Roll dough, jellyroll fashion beginning with longer side then slice to rolls (1-inch thick).
Lay the rolls on 2 greased 13×9x2 inch pans and cover with cloth. Allow to rise till volume has doubled, at about an hour. Place inside the oven and bake 20-25 mins. Let it cool.
Combine powdered sugar and orange juice then drizzle onto warm rolls.
