Hot Cross Buns Recipe
Ingredients:
5-1/2 to 6 c of flour (all purpose)
1/3 c of sugar (granulated)
2 packets of yeast (Fleischmann’s or RapidRise)
1 tsp of cinnamon (ground)
1/2 tsp of salt
1/4 tsp of allspice (ground)
1/4 tsp of nutmeg (ground)
1 c of evaporated filled milk
1/2 c of water
1/3 c of butter (or margarine); cut to pieces
2 pcs of eggs (large)
1 c of dates (imported); pitted then chopped
1/2 c of candied fruits (mixed); chopped
1 pc of egg white; slightly beaten
Instructions:
Combine (2 cups) flour, dry yeast, salt, sugar, cinnamon, nutmeg, and allspice inside a mixing bowl. Heat water, butter, and milk till heated (120-130 degrees F) then slowly add onto the dry mixture. Beat for two mins.
Add (1/2 cup) flour and eggs then beat vigorously. Add enough amount of flour, making the dough soft. Knead the dough on a floured board till elastic and smooth, about 6-8 mins.
Place on a buttered bowl; turn once and cover. Allow to rise till the size has doubled, at about 46-60 mins. (10 mins if using RapidRise)
Punch down the dough and turn on a floured board. Add the fruits and knead thoroughly. Divide equally to 18 parts and shape each to (smooth) balls then arrange them on 2 buttered 8 inch round or square pans and cover.
Allow to rise till the size has doubled, at about 30-45 mins. Gently brush the top with egg white and bake for twenty mins at (375 degrees F). Let them cool and pipe the icing on top, forming a “cross”.
For the icing, combine milk, powdered sugar, and vanilla. Stir till smooth.
