Ice Box Potato Rolls Recipe
Ingredients:
1 pkg of yeast (dry)
1/2 c of water (lukewarm)
1 c of milk
2/3 c of shortening
1/2 c of sugar (granulated)
1 tsp of salt
1 c of cooked potatoes (mashed)
Flour; sifted
2 pcs of beaten eggs
Instructions:
Dissolve the yeast with (lukewarm) water; set aside. Scald the milk then add salt, sugar, shortening, and potatoes; Let it cool into lukewarm. Once cooled, add in (dissolved) yeast and mix them thoroughly.
Gradually add enough amount of flour, making the dough soft. Cover then let it rise till the volume has doubled. Add beaten eggs then gradually add enough amount of flour, making the sough stiff.
Turn dough on lightly floured surface then knead dough thoroughly till pliable and smooth. Place inside buttered bowl then cover it with cloth. Place inside refrigerator.
Pinch pieces from the dough and shape. Arrange onto greased cooking sheet. Let it rise till the volume has doubled, or for 1.5-2 hours. Place inside the oven and bake for 15-20 mins at (400 degrees F) or till slightly brown.
Carefully brush butter on the top when almost browned. Let it cool.
