Island Banana Bread Recipe
Ingredients:
2 c of all purpose flour
1/2 tsp of salt
1 tsp of baking powder
1/2 tsp of baking soda
1.5 tsps of cinnamon; ground
1/2 c of butter; at room temperature
3/4 c of brown sugar; packed
2 pcs of eggs; beaten slightly
1 tsp of vanilla (extract)
1 c of bananas (ripe, about 3 pcs); mashed
1/2 c of pecans; chopped
8 ozs of cream cheese
1/2 c of coconut
1 pc of egg
Instructions:
Grease 2 baking pans and set it aside. Mix soda, cinnamon, salt, flour and soda. Set it aside. Cream butter using a mix on high-speed for about half a minute. Mix in 1/2 c of sugar, 2 pieces eggs, and extract. Mix ’til well blended. Alternately add the bananas and flour mixture into the wet ingredients, mixing on low-speed after every addition ’til well blended. Mix in chopped pecans. Whisk cream, an egg and the remainder of sugar at medium-speed into a medium-sized bowl. Add in the coconut and mix well.
Fill each pan with 1/4 full of batter. Add a spoon of cream mixture on each pan. With a rubber spatula, create a marble look by cutting through mixture. Repeat steps above when proceeding with the other 2 layers but don’t marble. Let it bake into a preheated oven with a temperature of 350 degrees-F for 50-55 minutes ’til a cake tester is clean after inserting. Allow to cool for ten minutes before removing then let it cool thoroughly on racks.
