Jalapeno Breadsticks Recipe
Ingredients:
1 Tbsp of butter (unsalted)
1/2 pc of onion (medium); minced
Cornmeal
2 tsps of yeast (active, dry)
1/4 c of water (warm)
1-1/2 tsps of sugar (granulated)
1-1/2 tsps of salt
6 pcs of chiles (jalapeno); seeded then chopped
1 c of buttermilk
3-1/2 c of flour (bread)
Instructions:
Saute the onion with butter above moderate heat till slightly browned. Take out from the heat; set on the side. Slightly grease 2 large cooking sheets then sprinkle cornmeal on the surface.
Dissolve yeast with (warm) water inside large bowl; allow to stand till dissolved. Add sugar, chiles, salt, sauteed onions, (2 cups) flour, and buttermilk. Beat thoroughly and gradually add enough amount of flour, making the dough pliable.
Turn it out on slightly floured board and knead for five mins. Place on buttered bowl and cover with cloth. Allow to rise till the volume has doubled, for 1.5-2 hours or so.
Punch the dough down then divide equally into four sections. Roll each section and form to 8 inch square. Cut equally into eight strips and place on the sheet; do the same for all. Allow strips to rise for an hour.
Bake inside the preheated oven (400 degrees F) for 10-12 mins or till slightly golden.
