Lemon Blueberry Bread Recipe
Ingredients:
1/3 c of butter; melted
1 c of sugar (refined)
3 Tbsps of lemon juice
1/2 c of walnuts; chopped
2 pcs of eggs
1.5 c of all purpose flour
1 tsp of baking powder
1/2 c of milk
1 tsp of salt
2 Tbsps of lemons zest
1 c of blueberries (frozen or fresh)
Instructions:
Grease lightly an 8 x 4 inch baking pan. Whisk eggs, butter, juice of a lemon and a cup of sugar together into a bowl. Combine baking powder, salt and flour. Alternately mix butter mixture and milk to dry ingredients. Add in blueberries, zest and nuts.
Fill pan with batter and bake into heated oven with a temperature of 350 degrees-F for 60-70 minutes or ’til cake tester come clean after inserting. Allow bread to cool for ten minutes. While waiting, combine half cup of sugar and juice of a lemon into a small-sized bowl. Transfer to cooling racks, then drizzle glaze over bread.
