Lemon Scones Recipe
Ingredients:
4 c of all purpose flour
1/4 tsp of salt
2 Tbsps of baking powder
3 Tbsps of lemon zest
1/4 c of sugar (granulated)
1/2 c of butter (1 stick); diced into a half inch pieces
2 pcs of eggs; well beaten
2/3 c of buttermilk or milk
Instructions:
Sift sugar, salt and sour in a medium-sized bowl. Add in the orange zest. Dice in the butter ’til mixture is crumbly. Add the eggs and milk enough to firm up dough.
Transfer dough over a lightly-floured surface. Roll dough gently about a half inch thick.
Add flour if necessary in order to avoid dough from sticking to work table. Carve up circles with the use of a cookie cutter, lightly-floured with 2 inches in diameter.
Arrange circles a half inch from each other on the cookie sheet. Bake ’til golden-brown for 12-15 minutes. Yields 16-20 scones. Best served warm with a variety of marmalades and jams.
