Lemon Zucchini Bread Recipe
Ingredients:
1.5 c of zucchini; shortened
1.5 c of all purpose flour
1 pc of egg
3/4 c of sugar (refined)
1/2 c of vegetable oil
1/2 tsp of salt
1/4 tsp of baking powder
1/2 tsp of baking soda
1 tsp of cinnamon; ground
2 tsps of lemon zest
Instructions:
Grease with butter an 8 x 4 inch baking pan. Combine oil, egg, sugar and zucchini into a mixing bowl. In another bowl, combine baking powder, soda, flour,salt together, add in zest and cinnamon. Blend wet with dry components, mix well.
Fill pan and bake in heated oven with temperature of 325 degrees Fahrenheit for forty-five minutes or ’til cake tester is clean after inserting. Remove pan from the oven and let it cool for ten minutes. Transfer to cooling racks to thoroughly cool.
