Mango Bread Recipe
Ingredients:
2.5 c of mango; diced finely
1 Tbsp of lemon juice
1.5 tsps of cinnamon
1.5 tsps of baking soda
1 & 1/4 c of sugar (granulated)
3 pcs of eggs
1/2 tsp of salt
3/4 c of vegetable oil
2 c of flour
1 c of walnuts; chopped
Instructions:
Grease with butter and sprinkle flour 2 9×5 inch baking pans. Pour juice of lemon on mangoes. Set it aside. COmbine sugar, salt, soda and cinnamon into a large-sized bowl. Into a separate bowl, whisk oil and eggs together.
Combine egg mixture and the marinated mangoes. Blend dry ingredients to the wet ingredients. Fold in walnuts. Mix well. Fill the pans with batter and bake into a preheated oven with a temperature of 325 degrees Fahrenheit for 50-60 mins.
