Masa Biscuits Recipe
Ingredients:
3 & 3/4 c of unbleached flour (all-purpose)
2 Tbsps plus a teaspoon of baking powder
1/2 c of butter (unsalted); chilled well
2 c of chilled buttermilk
1 & 1/2 c of Masa Harina
1/2 c of shortening (vegetable); chilled well
1 tsp of salt
Instructions:
Arrange racks on middle and upper third layer of your oven. Preheat your oven (four hundred fifty degrees Fahrenheit).
Cut shortening and butter to small square pieces. Combine masa, salt, baking powder & 3 & 1/2 c of flour in large mixing bowl. Blend shortening and butter in ’til mixture becomes but lumpy and coarse.
Add in your buttermilk and mix ’til a crumbly and soft dough forms. Dust surface w/ half of remaining all-purpose flour.
Turn out and form a dough ball. Kneading it ’til dough holds well. Flatten and sprinkle w/ remaining all-purpose flour. Roll out ’til it forms 1-inch thick.
Using a rounder cutter, form your biscuits and then transfer to 2 bake sheets (ungreased), spacing them at least two inches away from the other.
Set sheets carefully on oven racks. Bake biscuits for 15 mins or ’til crisp and golden-colored. Halfway while baking, exchange sheet positions on racks.
