Meltaway Corn Bread Recipe
Ingredients:
1/2 c of margarine
1 c of flour
1/2 c of jack cheese (Monterey); shredded
1/4 tsp of salt
1 c of cornmeal (yellow)
1/2-1 c of sugar (granulated)
1 can of corn (cream style, 16 ozs)
1/2 c of cheese (Colby); shredded
4 tsps of baking powder
4 pcs of eggs
Instructions:
Grease a 12×8 inch loaf pan. Sprinkle some flour. Beat sugar and margarine together. Mix in salt, chesses, corn and eggs. Blend thoroughly.
Sift baking powder, cornmeal and flour together and combine dry mixture to the cheese mixture w/o over beating. Fill pans with batter and bake in an oven with temperature of 300 deg Fahrenheit for forty-five minutes.
