Mexi-Cali Corncakes Recipe
Ingredients:
4 c of cornmeal
1/2 c of vegetable oil
2 tsps of pepper
1.5 c of onion; chopped
1-2 pcs of jalapeno; chopped finely
2 Tbsps of sugar (granulated)
1.5 tsps of salt
1 can of corn (creamed, 16 ozs)
1 c of all purpose flour
Instructions:
Boil water. Combine oil and cornmeal into large-sized bowl. Mix in boiling water; enough to make a soft dough. Add onion, sugar, jalapeno, salt and flour. Mix well then blend in corn. Grease evenly a skillet.
Let it heat on medium-heat. Pour a cup cornmeal mixture to skillet. Evenly flatten cornbread. Cook batter like you do with pancakes.
