Mountain Top Apple Bread Recipe
Ingredients:
4 pcs eggs (large)
1/2 c of buttermilk
3 tsps of vanilla
1/4 tsp of salt
1/2 tsp of baking soda
2 green apples (Newton Pippin, medium-sized)
1 c raisins
2 c of sugar (granulated)
1 tsp of cinnamon
1 c walnuts; chopped
1 tsp of baking powder
3 & 1/2 c of flour (all-purpose)
1/2 c of mayonnaise
Instructions:
In mixing bowl, combine and beat together eggs, buttermilk, extract, sugar and mayonnaise ’til smoothened. In separate bowl, combine flour, baking soda & powder, cinnamon and salt. Gradually add into egg mix, then stir ’til everything’s combined. Chop green apples after it has been cored. Blend into batter and top w/ nuts and raisins, stir well.
Have your batter spread over two greased & floured loaf-shaped pans (9″ x 5″). Bake it at three hundred seventy degrees Fahrenheit ’til wooden stick is particle-free after inserting into center of loaf (approx 1 hr & 10 mins). Allow to evenly cool for ten minutes, and turn loaves out into racks to completely cool.
